Summer is here! …and it’s awesome!
We have jumped right into summer and it’s amazing! We headed right off to the Samoset Resort in Rockland on Thursday after school. This is a tradition we started a few years ago and it’s one I hope we will continue for many years to come.
We spent our first few days at the resort enjoying the company of some of our closest friends and family. We played at the pool, on the playground and walked the breakwater to the lighthouse. It was a blast. I love starting the summer this way because even when the trip is over, there is still a lot of the summer left to look forward to.
We rushed home to meet our cousins for our first show of the summer at the Ogunquit Playhouse. The children’s theater production of Sleeping Beauty was being performed and the kids had a great time.
BBQ’s and beach time rounded off the weekend and yesterday we were up early to go strawberry picking! It’s been busy and so wonderful! I hope this summer passes slowly, although I know that’s an impossible request.
Fresh Summer Salsa
I have not done a lot of cooking since summer began but I did make this really yummy summer salsa. When I served it I had lots of requests for the recipe. Pretty sure I could eat a whole bowl of this stuff all by itself! If you are interested, here it is! Hope you enjoy!
Fresh Summer Salsa Recipe
- 1 cup corn fresh or frozen
- 1 cup fresh blueberries
- 1/2 cup strawberries chopped
- 1/2 cup fresh cilantro chopped
- zest lime
- juice lime
- 1/2 tsp salt
- 1/4 tsp pepper
- 1/2 jalepeno diced (if you don't like spicy, use less of the pepper)
Mix all ingredients together in a large bowl.
Serve immediately or cover and store in the refrigerator for up to 5 days.
