Easy Chocolate Chip Zucchini Bread Recipe

I love summer!  Such an amazing break from the everyday grind.  It really is a chance to rejuvenate the soul!  This summer I tried something completely new to me.  I started a vegetable garden.  I went all in and started this garden completely from seed.  I planted peppers, onions, cucumbers, tomatoes and zucchini.  I can tell you now, a few months in that I have a very well established zucchini garden!  Apparently that’s a thing, zucchini taking over and in hindsight I probably planted my zucchini too close to everything else and now it rules the roost.  Oh well, it’s been fun and I have a WHOLE LOT OF Zucchini.  I have been making this bread like crazy and freezing it in an effort to put the veggies to good use.  I hope you enjoy this easy chocolate chip zucchini bread recipe.

Easy Chocolate Chip Zucchini Bread Recipe

Ingredients

  • 3 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 teaspoon baking soda
  • 3 eggs I used egg replacer because Virginia's allergic and turned out great!
  • 2 cups white sugar
  • 1 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 2 cups grated zucchini
  • 1 cup chopped pecans
  • 1 cup semisweet chocolate chips​

Instructions

  1. Preheat oven at 350 degrees
  2. Grease 2 loaf pans.
  3. Sift together flour, baking powder, salt, spices and baking soda.
  4. In a large bowl, beat eggs. Add sugar, and continue beating until well blended. Stir in oil, vanilla, zucchini, pecans and chocolate chips. Stir in sifted ingredients. Pour into loaf pans.
  5. Bake for 60 minutes, or until knife comes out clean. Remove loaves from pans and cool.
